Vegan French Toast

2020-01-20 08.38.04When I became vegan, one of the things I missed is French Toast. Well, ta da! We now can do it. There is this amazing new product (or at least new to me) called “Just Egg.” I definitely hesitated when buying it, because it’s pricey ($6.99 for a small bottle and it has an expiration date too!). But I’ve used it a few times for several different things and it’s been good all the time.

So the other day I made French Toast. Honestly, this is why I bought it I mean, I can use tofu for scrambled eggs, I can use many options for other items, but I wanted French Toast. And now I can do it!

2020-01-20 08.13.37One of the things I do suggest is when you use this product to whip it to make if frothy. As I’m sure you know, I have a handy-dandy little handheld foamer that I got from Amazon. But the eggs are flat and need to be made fluffy. That’s my only caveat. So here’s my French Toast recipe. This serves one.

  • 1/2 c. Just Egg
  • 2 T. milk (I used soy)
  • 1 t. vanilla
  • 1/2 t. cinnamon
  • 1/4 t. cardamom
  • 2 pieces bread
  • Spray for you pan. I use a Coconut Oil Spray.
  1. 2020-01-20 08.22.50Cut your bread in half so it is easier to dip in the bowl.
  2. Mix all of the other ingredients in a bowl and froth well. This is harder than frothing for coffee, but you want it mixed well and to be foamy.
  3. In the meantime spray your pan and heat it. When the pan is ready, dip your bread in the egg mixture and brown on both sides. For this it makes the bread a little soggier than a normal French toast but just be patient.
  4. Enjoy with your favorite syrup. I like using 100% organic maple syrup. Enjoy.
