New Year Burrito

I am warning you now – this is the first in a loooong series of taco and burrito recipes because they are myriad and fun. So this is numero uno. I have so many ideas for them, I’ll be doing it all year. 

  • 1 small winter squash, cooked and scraped (I mean really small or part of a sweet potato)
  • 1/2 purple onion
  • 1/2 bell pepper (I used orange because I like the flavor the best)
  • 2 links your favorite meat substitute (I used one spicy and one regular)
  • 1 c. pureed beans ( I used my leftover black-eye peas, henceforth they are called New Year’s Tacos.) But in reality, any beans, especially black beans, are fine. 
  • 1-2 avocado
  • 3 radishes
  • Cheese alternative 
  • Tortillas (your choice, I chose the Mission Gluten-Free Garlic Herb because I like them. These are more burritos than tacos)
  • Salsa 
  1. Cook the squash. I used a small acorn squash that was maybe 3″ inches in diameter. I removed the seeds and then scraped the squash out.
  2. img_4526-2I quartered the 1/2 purple onion and 1/2 bell pepper and then put it in my handy dandy favorite food processor. I’ve been known to show this food processor to my guests.) One thing on the small food processors is if you are just trying to chop, you may have to do a little bit and then another little bit, or else the food gets pureed instead of chopped. Set them aside.
  3. After you chop the onion and pepper and set them aside, take about 1 cup of whatever cooked beans you are using. Since I just cooked black-eyed peas for New Year’s voila! That’s what I use. Put them in the food processor and puree them. Set them aside.
  4. Spiralize the 3 radishes.  Below is a picture of spiralized radishes and the spiralizer just makes them pretty. Sometimes pretty is cool. One of the handiest kitchen gadgets is the spiralizerIMG_4529
  5. In a frying pan with just a little oil to coat the pan, fry the sausages. Some brands of meatless sausages have casings and some do not, so if yours does, remove the casing. We are sauteing this like hamburger meat. I had one that was spicy hot and one that wasn’t and I mixed them up so the meat substitute wasn’t too hot. 
  6. Warm the tortilla. You can microwave for a few moments or heat a little oil and warm in a pan. 
  7. Spoon the pureed beans onto the tortilla and spread it thin. Add a thin layer of squash, then the onion and pepper mix, then the meat and then the cheese. 
  8. Slice the avocado and put about 1/4 to 1/2 an avocado on each burrito. Garnish with the radish. Add your salsa of choice. Enjoy! (This makes 2-4 servings, depending upon how much you put on each burrito.

KITCHEN TRICKS: A trick to keeping radishes and green onions longer. For radishes put them in a bowl of cold water in the refrigerator. For green onions, stand them bulb side down in a glass of cold water in the refrigerator. This will significantly extend their lives. My mom also did this when she cut up celery and other such things, but quite frankly, I don’t cut up celery or carrots like she did.  

ARGH! I forgot to take a picture of the finished product but I have leftovers and will update in a day or two. But suffice it to say, but myself and a non-vegan friend thought it was awesome.
