Oh my word, I am so stoked! I just ate pancakes for breakfast and they were absolutely healthy. For reals. Birchbenders Pancake Mix is yummy. I decided to try it and I loved it. You only add water. I cut the small recipe in half and it still produced perfect pancakes.
Then I added Maple Syrup. Maple Syrup is a gift from the gods. Okay, maybe that’s stretching it, but I’m feeling that right now. And I topped it off with fake, healthy butter. No, that is not a contradiction in terms. Earth Balance Butter is yummy and healthy (IMO). I’ve done the research and it appears to raised hdl and lower ldl. I know, this all makes no sense to most of us, but to my doctor it does. LOL. But I can say it has no hydrogenated oil or lecithin,
And so now, I have a serious problem. I keep trying to upload a pic of my beautamous pancakes but when I succeed it makes two pictures of my gorgeous pancakes. Grr! This is driving me nuts! Bonkers! Cray! Aagh! What do I do? But then I fixed it. Instead of doing all the lazy ways that were taking me forever (uploading to Facebook and then downloading, saving to pictures, etc. – all with right clicks naturally) I did it the old fashioned way. I emailed it to myself, saved and Voila! I have a single picture.
